Cooking Instructions

The protein cooking time listed in this recipe has been updated.

As of December 2025, we've revised cooking times for all our proteins to reflect improved food safety guidance.

Check out the latest recommended times in our Cooking Guidelines.

Before you start

  • Bring a medium saucepan filled with salted water to a boil
  • Pull out a large lidded saucepan, a sieve, a measuring jug & a peeler

Get started

  • Trim the green beans and cut into thirds. Thinly slice the onion and pepper. Peel the carrot into ribbons. Thinly slice the spring onion. Quarter the lime
  • Heat the large saucepan with 1 tsp olive oil on medium-high heat. Once hot, add the turkey, onion and pepper and cook for 6-7 mins, until the turkey is golden. Season with salt and pepper

Cook the noodles & green beans

  • Meanwhile, add the noodles to the saucepan of boiling water, gently separate with a fork and simmer for 6-7 mins, until cooked
  • In the final 3-4 mins, add the green beans and cook until tender. Drain together, then rinse under cold water

Simmer the broth

  • Add the chilli paste (for those who'd like the heat), miso paste, ginger & garlic paste and 500ml water (250ml for 1 person) to the turkey pan and bring to the boil. Lower the heat to medium, cover with a lid, and simmer for 12 mins ,until the turkey is cooked through
  • In the final 4-5 mins, add the carrot ribbons and cook until soft
  • Add a squeeze of lime to the broth, taste and season with salt and pepper

Plate up

  • Check your turkey pieces are cooked through; the meat should be white with the juices running clear
  • Share the noodles and turkey broth between bowls. Garnish with the spring onion, sesame seeds and remaining lime wedges
